6/23/2006 – I would like to convert this coopers wheat to a wit beer. What would I need to add to the recipe to convert it? I have been told that I could add 1tbs coriander and 1 orange peel zested into the primary. Does this sound correct? Also, what quantity of the wheat DME should I use? Response From Homebrew Heaven: I would add that coriander and orange peel in the last minute of the boil. Make sure the coriander is crushed right before you throw it in.Ideally you would use about 2.5 lbs of dry wheat malt extract. If you like a light wit, 1.5 lbs would be just fine.

Alternatively, you can add extract flavoring after all fermentation is complete. This allows you to "add to taste" just prior to bottling or kegging. 10/19/2004 – I am already planning on making a beer for Christmas and flavoring it with cinnamon and nutmeg. However, if I wanted to use grated ginger in a beer recipe, would it be a good match with something like a Canadian Ale? I want something light and crisp that would be further enhanced by the spice of ginger.
Response From Homebrew Heaven: Yes, we think ginger makes a nice addition, cinnamon too! HOWEVER...our advice is to be careful with nutmeg. The nutmeg seems to get more intense over time. Even a small amount seems to be too much, so use with caution.
5/29/2004 – I have an extract recipe for a Belgian Wit. This recipe tells you to add coriander at 45 min. and again at 57 min. in a 60 min. boil. Will boiling it for this long cause any problems, and why do you recommend only 1 min. of boiling?
Response From Homebrew Heaven: To be clear, WE didn't specify it, your recipe did.Boiling destroys the delicate aromatics compounds that we want, so spices like this often added at the very end of the boil to improve the aroma. The same reasoning applies to hops. To obtain a nice hop "nose", some hops are added at the end of the boil. Same with spices.
