1/20/2008 -- How long will pellets or fresh hops stay fresh?
Response From Homebrew Heaven: That depends on how they are packaged, stored, and the storage temperature.
The BEST situation is vacuum packed and sealed, and stored in a dark freezer (colder is better). Stored this way, you should have now problem with at least a year of storage.
Anything less will be well...less. Delicate aromatics compounds are the first to deteriorate, while the bitterness remains relatively unchanged.
Hop pellets seem to be more stable than leaf hops, due to the compression of the pellets themselves. The resin on each pellet surface seems to help "seal" the aromatics in.
