1/7/2013 -- Hello, acquired an expired home wine kit to make 4 bottles of merlot, will order new yeast (Sacc, Bayanus) however there is a dried packet of clearing agents, contents supposed to be liquid, but now gone, ingredients are Gleatin, Tartaric Acid, Sulpher Dioxide Solution and Pectinase. It's in a plastic "sealed" envelope (4"x2") now just some dried clumps in the pouch. What ingredients can I purchase from you to substitute for the missing (dried up) clearing pack?
Response From Homebrew Heaven: Only FOUR bottles of wine? I've never seen a kit like that, and I'm an old guy! All of ours make 30 bottles. I'd say you are better off tossing that "kit" out.
We do have all those additives (in one form or another), if you really want to do it, however. For the clarifier, I'd go with the 2-Part Wine Calrifier. See below for links to other products.
11/29/2012 -- I i want to buy a pound of your super start yeast and a pound of yeast nutrient. I would like to know how much yeast and nutrient i would need to put into a 1 gallon jug to make a sugar/corn mash with the highest abv i could get. would i need to use some kind of clearing agent in it after it was done?
Response From Homebrew Heaven: Here is a recipe for 5 gallons. You can scale it down as needed:
To obtain 20% alcohol, you would need approx 14.5 lbs of sugar. For maximum alcohol production, it is probably best to add the sugar incrementally...that is, perhaps 5 lbs of it, then wait a while (maybe a week?) add another 5 lbs, another week and add the rest. This routine avoids "sugar shocking" the yeast.
Use about an ounce of yeast in the beginning of the fermentation, and ALSO use some yeast nutrient (perhaps a 1/2 oz or so)
Use of 2-part wine finings is helpful in removing yeast and other by-products of the mash. See link provided.
4/14/2011 -- Does this 2 part wine fining contain chitosan as Super Kleer does?

1/22/2004 -- another question, does it strip wine of anything? especially taste?
Response From Homebrew Heaven: Not that I have noticed, and I recently took a "Best of Show" in a big wine competition using this. It goes into every varietal wine kit we sell, also. Very good stuff!
1/22/2004 -- does this really usually work within one day? as in 24 hours? and then is ready to rack?
Response From Homebrew Heaven: Very often, yes. That is not abnormal. I will still wait for perhaps 2-3 days before racking, however.
10/8/2003 -- this sounds better than pectic enzyme. how much do I use per gallon?
Response From Homebrew Heaven: Yes, it is very effective. You use all of the 2 bottles that come with the package for a 5 gallon batch.
