American Lager Recipe:

Time in Boil: 60 minutes

Primary Fermentation: 2 weeks or so

Secondary Fermentation: 2 weeks or so

Ingredients: 4.5 lbs American Style DME

1/2 oz. Perle Pellets (60 min)

1/4 oz. Hallertauer Pellets (60 min)

1/4 oz. Hallertauer Pellets (15 min)

1/2 tsp Irish Moss

Wyeast American Lager Yeast OR Wyeast #2112 (CaliforniaLager) if fermenting at room temperature.

1 tsp Amylase Enzyme

3/4 cup Corn Sugar, priming

Procedure: Bring six gallons of water to a boil. Addextracts and 1/2 oz. Perle and 1/4 oz Hallertauer. Boil for 45minutes. Add 1/4 oz Hallertauer and irish moss. Boil for 15 moreminutes.

Force chill w/ immersion chiller. Siphon into fermenterleaving as much trub behind as possible. Pitch yeast, amylaseenzyme and aerate well.

When fermentation begins, slowly cool to 54 degrees. Whenfermentation is over, rack to secondary, and lager for two weeks.Add priming sugar and bottle.
