I am looking for more of a background in how the sugars in each different type of mash is extracted and the science behind it? I got Moonshine made simple and found it lacking in the indepth science of it all. I have a biochemistry back ground and am looking for more of a complete text, what would you suggest? 3/6/2004 -- I have "Compleat Distiller" on my shopping list for general purposes. Do you know if this book covers the use of potatoes (versus grains) as the base for the fermentation stage, or do I need to search for additional "informational" materials? Thanks.
