Question
how much temp variation can my procrastintor bock handle useing wyeast hella bock#2487 and dried yeast pack. thanks alot for all your help and hopefully I won't screw up my first batch
also I am getting a fridge today but I dont have a special temp contoller. Will the temp inside the fridge vary too much

Response From Homebrew Heaven
The ideal temperature for lagers is "about" 45 to 55 °F. They will however, ferment just fine at room tempuratures. You won't get the characteristic lager flavors at that temp however.

Lagers can actually withstand considerable day-to-day variation as well. 5 degrees variation is no problem.

A word of caution here...most refigerators are set to about 35 deg F. The temperature changes very little. That will WORK for lagers, but your fermentation time will be drastically increased. A controller will enable you to keep your brew in the 45 to 55 °F range.

Brewers are creative people. Lots of people use a water bath surrounding their fermenter to cool it off. Even adding ice to control it. Some people use a wet t-shirt on their brew too.

After bottling, let it remain at room temperature for at least 10 days (for carbonation to develop). After that, you can store your beer at 35 degs, and it will continue to lager in the bottles. Another option for you.

All that said, I have done the Procrastinator Bock at room temperature and it came out just fine. Tasty indeed. Perhaps it would have benefited from cold lagering, but it disappeared quickly.
