4/29/2004 -- Is this the stuff to use if you want that berry afterflavor you get from some of the nice wines. If so, when do you add it to the carboy, and how much.
I do not want to sweeten the wine. I just want the berry aftertaste.

Response From Homebrew Heaven: Dried Elderflowers can enhance the bouquet of your white wines. Elderflowers can be added at a quantity of approximately 8 grams (1/2 tablespoon) in 5 gallons (6 us gallons). The elderflowers can be enveloped in a cheesecloth and immersed in the primary fermenter. It is recommended to remove the elderflowers after 72 hours to avoid undue bitterness.
